# Expert Suggestions:

01 -
  • It tastes like you spent all day cooking when you really didn't.
  • Everyone devours it without asking what's in it, and you get to feel like a genius.
  • You can make the chili ahead and just reheat when you need it, making last-minute entertaining actually possible.
02 -
  • Cook your chili until it's actually thick and reduced, not watery, or the fries will get soggy from the moisture.
  • Rinse your canned beans under cold water; this step alone prevents the chili from turning gummy and mushy.
  • Cheese needs to go on while the chili is still hot, or it won't melt properly in the oven.
03 -
  • Make your chili the day before if you can; the flavors deepen overnight and you'll have less stress when guests arrive.
  • If your fries come out of the oven and the cheese isn't quite melted, crank the broiler on high for just 1 to 2 minutes, watching carefully so it browns but doesn't burn.
