# How To Make:

01 - In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract and optional almond extract; mix until homogenous.
02 - Whisk the flour and salt in a separate bowl, then gradually fold the dry mixture into the wet mixture to form a soft dough. Divide the dough in half, flatten each into a disc, wrap in plastic and refrigerate at least 30 minutes to firm.
03 - Preheat the oven to 350°F. On a lightly floured surface, roll chilled dough to 1/4-inch thickness. Cut with Taurus or zodiac cutters, transfer shapes to parchment-lined baking sheets spaced about 1 inch apart and bake 10 to 12 minutes, until edges show a hint of color. Transfer to wire racks and cool completely.
04 - Beat the egg whites (or reconstituted meringue powder) to soft peaks. Gradually add sifted powdered sugar and beat until stiff, glossy peaks form. Add lemon juice and vanilla; adjust consistency with a few drops of water to reach piping and flooding consistencies. Portion icing into bowls and tint as desired.
05 - Transfer piping and flooding consistencies into piping bags. Outline each cookie and flood the interior, using a toothpick to smooth if necessary. Allow flooded icing to set at room temperature for about 2 hours or until completely dry to the touch.
06 - Mix edible gold luster dust with a few drops of clear alcohol or lemon extract to make a paint. Using a fine brush, apply gold accents, Taurus symbols or constellation motifs to the dry icing. Allow gold paint to dry fully before handling.
07 - Arrange cookies neatly in a gift box lined with parchment. Add a zodiac card or themed insert if desired and allow all decorations to cure before sealing the box.
